ارزیابی ژلاتین استخراج شده از پوست تاسماهی سیبری (Acipenser baerii, Brandt, 1869) و تولید فیلم زیست تخریب پذیر

چکیده
اهدف: در این تحقیق، استخراج ژلاتین از زایدات تاسماهی سیبری و استفاده از آن در تهیه فیلم، مورد بررسی قرار گرفت.

مواد و روش­ها: استخراج ژلاتین به روش توام اسید و باز صورت گرفت. بعد از ارزیابی خصوصیات ژلاتین استخراج شده (درجه بلوم، pH، تست زتا و دما و زمان باز و بسته شدن ژل)، از محصول نهایی به روش کاستینگ فیلم تولید شد.

یافته ­ها: نتایج نشان داد بازده استخراج ژلاتین از زایدات تاسماهی 06/20% بود که میزان پروتئین، pH، درجه سختی ژل و دما و زمان بسته و باز شدن ژل به ترتیب، 6/0 ± 2/79%، 4، 4/0 ± 2/160 گرم، 2/0 ± 1/13 درجه سانتی­گراد در 5/0 ± 3/180 ثانیه و 5/0 ± 33/19 درجه­سانتی­گراد در 5/0 ± 66/140 ثانیه بود. ارزیابی پتانسیل زتا حاکی از مثبت بودن بار سطحی ژلاتین بود. فیلم خوراکی حاصل از ژلاتین دارای ضخامت، رطوبت، حلالیت، مقاومت کششی، کشش تا لحظه پاره شدن و نفوذپذیری به ترتیب، 0 ± 05/0 میلی­متر، 5/1 ± 2/10%، 7/3 ± 79%، 7/0 ± 01/30 مگاپاسکال، 6/3 ± 5/77% و g mm/h mm2kpa×10-6 0 ± 5/3 گزارش گردید. تصاویر حاصل از SEM در فیلم، ساختاری صاف و بدون ترک خوردگی نشان داد. همچنین نتایج حاصل از FTIR گویای شکل­گیری باندهای آمیدی در ناحیه 3277، 1633، 1530 و cm-1 1236 بود.

نتیجه­ گیری: با توجه به بازده و خصوصیات ژلاتین، و خصوصیات مکانیکی و فیزیکی فیلم حاصل، می­توان از آن برای تهیه فیلم­های زیست­تخریب­پذیر در نگهداری مواد غذایی بهره برد.
