اثر اسانس فلفل دلمه سبز (Capsicum annuum) جهت مقایسه کیفی سوسیس ماهی کپور نقره ای (Hypophthalmichthys molitrix) با سوسیس گوشت قرمز طی نگهداری در یخچال

چکیده
هدف از این پژوهش بررسی اثر آنتی اکسیدانی و آنتی باکتریایی اسانس فلفل دلمه سبز جهت مقایسه کیفی سوسیس ماهی کپور نقره ای با سوسیس گوشت قرمز طی نگهداری در یخچال و همچنین جایگزینی با بخشی از نیتریت مورد استفاده در فرآورده های گوشتی بود. اسانس از میوه فلفل دلمه سبز به روش کلونجر استخراج شد و آزمون های میزان اسید آسکوربیک، ترکیبات فنولیک، قابلیت حذف رادیکال های آزاد (DPPH) جهت تعیین قدرت آنتی اکسیدانی و آنتی باکتریایی انجام گردید. اسانس استخراج شده در سه غلظت 0، 2 و 4 % به نمونه های سوسیس تهیه شده از کپور نقره ای و گوشت قرمز اضافه شد. نمونه ها به مدت 30 روز در دمای C ° 4 نگهداری شدند. آزمون های شیمیایی (pH، TBA وTVN ) و ارزیابی میکروبی (TMC، PTC، کلیفرم و کپک و مخمر) در فواصل زمانی 5 روزه به مدت 30 روز در 3 تکرار انجام شد. نتایج pH،TBA (mg MDA/Kg fat) ، TVN (mg N/100g Flesh)، TMC، سودوموناس، کلیفرم و کپک و مخمر (CFU/g) در روز 30 نگهداری برای تیمار شاهد سوسیس ماهی (دارای حداقل عمر ماندگاری) به ترتیب 63/7، 4/3، 3/45، 6/11، 11، 5/2 و 1.5، و تیمار سوسیس گوشت حاوی 4 % اسانس فلفل دلمه سبز (دارای حداکثر عمر ماندگاری) به ترتیب 35/7، 86/1، 5/34، 3/5، 9/4، 62/0، صفر بوده است نتایج نشان داد که اسانس فلفل دلمه ای سبز 4 % می تواند به عنوان یک نگهدارنده طبیعی مناسب در سوسیس گوشت و ماهی استفاده گردد.
